Flank Steak with Chili Butter

Ingredients
- 1 (2 lb.) flank steak
- Southwestern Marinade
- Chili Butter
- Garnish: red jalapeno peppers
- Southwestern marinade:
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 Tbsp. hopped fresh cilantro
- 1/2 cup olive oil
- 1/4 cup lime juice
- 2 Tbsp. Worcestershire sauce
- 2 tsp. sugar
- 1 tsp. salt
- 1 tsp. ground cumin
- 1 tsp. pepper
- Chili Butter:
- 1 cup butter or margarine, softened
- 1 garlic clove, minced
- 2 Tbsp. chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. hot sauce
Directions
- Place flank steak in a shallow dish or heavy-duty zip-top plastic bag and add Southwestern marinade. Cover or seal and chill 8 hours, turning occasionally.
- Remove steak from marinade discarding marinade.
- Grill, covered with grill lid, over medium-high heat (350 to 400 degrees) 7 to 8 minutes on each side or to desired degree of doneness. Cut steak diagonally across the grain into thin strips. Serve with Chili Butter. Garnish, if desired.
