Garlic Grits

Ingredients

  • 2 cups grits
  • 2 quarts water
  • 3 tsp. salt
  • 6 oz. American cheese, grated
  • 3 cloves garlic pressed
  • 1 stick butter
  • 3 eggs, slightly beaten
  • 2 cups milk
  • grated Parmesan cheese

Directions

  1. Cook grits in boiling, salted water until tender, but still pourable.
  2. Remove from heat; add cheese, garlic and butter, stirring until melted.
  3. When cool add eggs and milk. Pour into two 2-quart casseroles that have been well greased. Bake in 325 degree oven for 50 to 60m minutes.
  4. Remove from oven; sprinkle with Parmesan cheese and bake for 10 more minutes. Serve immediately. (This may be prepared ahead. Keep refrigerated and bake before serving.)
