Grilled Chicken Salad Sandwiches

Ingredients

  • 4 skinned and bones chicken breast halves
  • Vegetable cooking spray
  • 2 tsp. Creole seasoning*
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Lettuce leaves
  • 8 tomato slices
  • 4 sourdough rolls, split

Directions

  1. Coat chicken with cooking spray; sprinkle with Creole seasoning.
  2. Grill chicken, covered with grill lid, over medium-high het (350 to 400 degrees) 7 minutes on each side or until done. Cool slightly; coarsely chop.
  3. Stir together mayonnaise and sour cream; stir in chicken. Cover and chill, if desired.
  4. Place lettuce and 2 tomato slices on bottom half of each roll. Top evenly with chicken mixture; cover with tips of rolls.
    • Blackened seasoning may be substituted for Creole seasoning.
