Grilled Vegetables with Herbs

Ingredients

  • 1 Tbsp. chopped fresh parsley
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 8 new potatoes, quartered
  • 3 medium-size yellow squash, cut into 1-inch pieces
  • 1 large onion, cut into 8 pieces
  • 1 large green bell pepper, cut into 8 pieces
  • 2 Tbsp. butter or margarine, softened
  • 1 Tbsp. chopped fresh oregano

Directions

  1. Stir together first 4 ingredients. Toss 1 Tbsp. olive oil mixture with potato. Toss remaining olive oil mixture with squash, onion, and bell pepper.
  2. Place potation a lightly greased grill wok.
  3. Grill, covered with grill lid, over medium-high heat (350 to 400 degrees) 10 minutes. Add squash, onion and bell pepper; cook, tossing occasionally 15 more minutes or until potato is tender.
  4. Stir together butter and oregano; add to vegetables; tossing to coat. Serve immediately.
