Grilled Vegetable Medley

Ingredients

  • 2 large yellow squash, cut into 3/4 inch thick slices
  • 1 large zucchini, cut into 3/4 inch-thick slices
  • 1 large yellow bell pepper cut into 1-inch square
  • 1 large red bell pepper, cut into 1-inch squares
  • 1 lb. fresh mushrooms, halved
  • 10 small new potatoes, halved
  • 1 lb. baby carrots
  • 1/2 cup olive oil
  • 1 (1oz.) envelope dry onion soup mix
  • 1 1/2 tsp. fresh or dried rosemary

Directions

  1. Toss together first 8 ingredients. Sprinkle with onion soup mix and rosemary; toss to coat.
  2. Tear 8 (12 × 18-inch) aluminum foil sheets.
  3. Place 1/8 of vegetable mixture in center of each foil sheet.
  4. Bring up 2 side of each foil sheet, and double fold with 1-inch-wide folds. Double fold
  5. each end to form a packet.

  6. Grill, covered with grill lid, over medium-high heat (350 to 400m degrees) 40 to 45 minutes or until tender.
