Oatmeal- Applesauce Muffins

Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup rolled oats
- 1/4 cup firmly packed brown sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. freshly grated nutmeg
- 1/4 tsp. salt
- 1 cup homemade applesauce OR unsweetened "natural" applesauce
- 1 (5oz.) can evaporated milk
- 1/2 tsp. freshly grated ginger
- 1 egg
- 3 Tbsp. vegetable oil
Directions
- Heat oven to 450 degrees. Lightly grease 12 to 14 standard-size muffin cups, or line with paper liners. Set aside.
- In a large mixing bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt. Make a well in the center and set aside.
- In a second medium bowl, combine the applesauce, evaporated milk, ginger, egg and oil; beat until smooth. Pour mixture into the well in the dry ingredients and stir just until mixed Some specks of dry flour should remain

visible in the batter.
- Spoon batter into the prepared muffin cups, filling each cup approximately 2/3 full. Bake on center rack 20 to 25 minutes or until muffins are golden and tops are springy.
- Serve warm with butter spple butter or honey.

Note: If you prefer sweet muffins, increase sugar to 1/2 to 3/4 cup.
