Harvest Mashed Potatoes

Ingredients

  • 4 large red potatoes (2 lbs.)
  • 2 medium-size sweet potatoes (1 1/2 lb.)
  • 1/4 cup butter or margarine
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1 Tbsp. prepared horseradish
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • Butter or margarine (optional)

Directions

  1. Peel potatoes, and cut into 1-inch pieces. Cook in a Dutch oven in boiling salted water to cover 15 to 20 minutes or until tender; drain and place in a large bowl.
  2. Add 1/4 cup butter and net 8 ingredients; mash with a potato masher until smooth. Top with additional butter, if desired.
