Penne with Spinach and Olives

Ingredients
- 12 oz. penne or other tube-shaped pasta
- 2 Tbsp. balsamic vinegar
- 3 cloves garlic, crushed
- 2 cups chopped fresh spinach
- 1/4 cup kalamata olives (pitted, chopped)
- 2 Tbsp. rinsed capers
- 3/4 cup crumbled feta cheese with tomatoes and basil (or plain)
Directions
- Cook pasta according to package directions.
- Meanwhile, in a large bowl, combine oil, vinegar and garlic; mix and let stand while pasta cooks.
- Add cooked pasta, spinach, olives, capers and feta, toss and serve.
