Penne with Spinach and Olives

Ingredients

  • 12 oz. penne or other tube-shaped pasta
  • 2 Tbsp. balsamic vinegar
  • 3 cloves garlic, crushed
  • 2 cups chopped fresh spinach
  • 1/4 cup kalamata olives (pitted, chopped)
  • 2 Tbsp. rinsed capers
  • 3/4 cup crumbled feta cheese with tomatoes and basil (or plain)

Directions

  1. Cook pasta according to package directions.
  2. Meanwhile, in a large bowl, combine oil, vinegar and garlic; mix and let stand while pasta cooks.
  3. Add cooked pasta, spinach, olives, capers and feta, toss and serve.
