Vegetable Couscous

Ingredients

  • 1 can vegetable broth
  • 3 Tbsp flour
  • 2 cloves garlic, crushed
  • 1/2 tsp each: cinnamon, all spice, turmeric, cumin, and pepper
  • 1 lb baby red potatoes, halved
  • 4 carrots, quartered and cut into 3” sticks
  • 1 turnip, cut into chunks
  • 1 bunch scallions, cut into 1” lengths
  • cauliflower
  • zucchini, cut into 1” chunks
  • 1 red pepper cut into 2” chunks
  • 1 can drained chickpeas
  • couscous

Directions

  1. In large pot, mix broth, flour, garlic, cinnamon, allspice, turmeric, cumin, & pepper. Add potatoes, carrots, turnip, & scallions. Top with cauliflower, zucchini, bell pepper. Cover, cook over low heat until tender (30-45 minutes). Add chickpeas. Serve over couscous.
