Ingredients
- 1 can vegetable broth
- 3 Tbsp flour
- 2 cloves garlic, crushed
- 1/2 tsp each: cinnamon, all spice, turmeric, cumin, and pepper
- 1 lb baby red potatoes, halved
- 4 carrots, quartered and cut into 3” sticks
- 1 turnip, cut into chunks
- 1 bunch scallions, cut into 1” lengths
- cauliflower
- zucchini, cut into 1” chunks
- 1 red pepper cut into 2” chunks
- 1 can drained chickpeas
- couscous
Directions

In large pot, mix broth, flour, garlic, cinnamon, allspice, turmeric, cumin, & pepper. Add potatoes, carrots, turnip, & scallions. Top with cauliflower, zucchini, bell pepper. Cover, cook over low heat until tender (30-45 minutes). Add chickpeas. Serve over couscous.
