Lemon Chicken

Ingredients

  • 1 chicken
  • chicken stock
  • juice of 3 lemons
  • 1/2 cup sugar
  • 1/2 cup boiling water

Directions

  1. Simmer chicken in chicken stock to cover in wok until nearly tender, about 20 minutes.
  2. Remove; half lengthwise. Place on broiler rack. Broil 4 to 5 inches from heat 10 minutes. Turn; broil another 10 minutes or until golden brown.
  3. Meanwhile, mix lemon juice, sugar and boiling water in saucepan. Bring to a boil; simmer 2 to3 minutes. Remove from heat; set aside.
  4. Arrange chicken halves on platter; spoon lemon sauce over chicken. Serve.
