Herb- Roasted Chicken

Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 2 shallots, diced
  • 3 garlic cloves, minced
  • 2 Tbsp. fresh rosemary, crushed
  • 1 (3 to 3 1/2 lb.)m whole chicken
  • 6 to 8 fresh parsley sprigs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Stir together first 4 ingredients.
  2. Loosen skin from chicken breast without detaching it; carefully rub butter mixture over chicken, and insert parsley. Rub butter mixture inside cavity. Sprinkle chicken with salt and pepper. Place chicken breast side up, in a roasting pan. Cover and chill, if desired.
  3. Bake to 325 degrees, and bake for 20 minutes. Reduce oven temperature to 325 degrees, and bake 40 more minutes or until done.
