Ingredients
- EVOO for drizzling
- 2 medium pizza doughs *
- A palmful of flour or cornmeal
- 2 tablespoons finely chopped rosemary
- coarse salt
- 1.5 pounds ground sirloin
- 1 medium onion, finely chopped
- 4-6 garlic cloves, finely chopped
- coarsely ground black pepper to taste
- 3-6 oz of tomato paste **
- 1/2 cup grated parm. cheese
- A handful of fresh parsley, chopped
- 1/2 teaspoon dried oregano
- 3/4 pound fresh mozzarella (ball, brick or shredded)
- * - recipe called for one large; I bought two medium (that is all they had at the store)
- But a quick tip, go to the deli section of your full-service grocery store; they will sell you the dough they use for pizza for cheap
- ** - recipe called for 3 oz., I used about 5 oz., I like tomatoes

e-heat oven to 425.

Drizzle a round pizza pan or rect. baking sheet with EVOO. Dust the dough with flour or cornmeal, then spread out evenly on sheet. poke the pizza dough in several places with the tines of a fork.

Drizzle with more EVOO and sprinkle with rosemary and salt.

Bake for 10 minutes.

Heat a large skillet over medium-high heat. Add 2 tablespoons of EVOO, then add the meat. Brown and crumble the meat for a couple of minutes, then add the garlic and onion. Season the meat with salt and pepper, then work in the tomato paste with the back of a wooden spoon. Stir in the parm. cheese, parsley and oregano.

Remove pizza crusts from the oven and top with the meat mixture. Arrange the mozz. cheese over the pizza. Return pizza(s) to oven and bake until cheese is bubbly and starting to brown, about 10 minutes.
