Honey-Maple Roasted Carrots

Ingredients

  • 2 lb. carrots, peeled and sliced on a long angle into pieces about 3 inches long
  • 2 Tbsp. extra-virgin olive oil
  • 1 Tbsp. pure maple syrup
  • 2 Tbsp. honey
  • 1 1/2 tsp. ground coriander
  • 1/2 tsp. coarse salt
  • 1/4 tsp. freshly ground black pepper
  • 1 Tbsp. sesame seeds
  • 1 Tbsp. fresh thyme leaves or 1 tsp. dried
  • 1 Tbsp. thinly sliced fresh chives
  • 1/2 cup pomegranate seeds m(optional)

Directions

  1. Preheat oven to 450 degrees. Lightly oil a rimmed baking sheet.
  2. Place carrots on pan and drizzle with olive oil, maple syrup and honey. Sprinkle with coriander, salt and pepper.. toss to coat. Spread carrots in a single layer.
  3. Roast 10 minutes, remove from oven and stir. Return to oven and roast another 15 to 20 minutes, stirring every 5 minutes, until tender and some of the edges are browned.
  4. Sprinkle sesame seeds, thyme leaves and chives over carrots and stir. Transfer to a serving bowl and scatter with the pomegranate seeds, if using.
