Broiled Skewered Scallops

Ingredients

  • 1 lb. sea scallops (not bay scallops)
  • 1/2 cup vegetable oil
  • 1/4 cup freshly squeezed lime juice, from about 2 limes
  • 1 to 2 cloves of garlic, minced
  • 1/2 tsp. rosemary
  • Salt and ground black pepper

Directions

  1. Combine all ingredients and marinate 2 hours to overnight in refrigerator.
  2. Heat broiler.
  3. Remove scallops from marinade and thread onto skewers.
  4. Broil on skewers 5 minutes each side or until cooked through. Depending on size of scallops, tie may be shorter.
