Sausage Jumble

Ingredients

  • 1 lb. bulk pork sausage
  • 1/2 cup chopped onion
  • 2 cups fresh or frozen whole kernel corn, thawed
  • 1 can(28 oz.) chopped tomatoes, undrained
  • 1 cup uncooked instant rice
  • 3/4 cup water
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2/3 cup shredded cheddar cheese
  • 1/3 cup shredded mozzarella cheese

Directions

  1. In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Add the corn, potatoes, rice, water, salt and pepper. Bring to a boil.
  2. Reduce heat; cover and simmer for 10 minutes or until rice is tender. Sprinkle with cheddar and mozzarella cheeses. Cook, uncovered, 5 minutes longer or until the cheese is melted.
