Cheesesteak Sandwich

Ingredients

  • 2 tbsp plain Greek yogurt
  • 2 tbsp olive-oil mayo
  • 1/4 cup crumbled blue cheese
  • 16 oz skirt or flank steak
  • salt and black pepper to taste
  • 2 cups arugula
  • 2 tomatoes, sliced
  • 4 whole-wheat sandwich rolls
  • Caramelized onions

Directions

  1. Combine the yogurt, mayo and blue cheese. Set aside.

  2. Heat a cast-iron skillet until hot. Season the steak with salt and pepper and cook for 3-4 minutes per side. Allow to rest for at least 5 minutes before slicing. Slice the steak into thin strips.

  3. Divide the arugula and tomatoes among the rolls. Top with the steak and caramelized onions and drizzle each sandwich with the blue cheese mayo.
