Ingredients
- 2 tbsp mayo
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 1/8 tsp salt
- 1/8 tsp pepper
- 3/4 lb pork tenderloin, cut into 1-inch cubes
- 1 tbsp blackened seasoning
- 1 tbsp canola oil
- 6 cups torn Romaine
- Salad croutons and shredded Parmesan
Directions

For dressing, in a small bowl, mix the first 6 ingredients until blended.

Toss pork with the blackened seasoning. In a skillet, heat oil over medium-high heat. Add pork; cook and stir 5-7 minutes or until tender.

To serve, place romaine in a large bowl; add dressing and toss to coat. Top with pork and croutons and cheese.
