Sausage and Pepper Pierogi Skillet

Ingredients

  • 1 packaged frozen mini four-cheese pierogies
  • 2 tbsp olive oil, divided
  • 1 lb smoke sausage or Italian sausage, halved lengthwise and sliced diagonally
  • 1 large sweet red pepper, cut into strips
  • 1 medium onion, halved and sliced

Directions

  1. Boil pierogies following directions; drain. In a large skillet, heat 1 tbsp oil over medium heat. Add sausage, pepper and onion; cook and stir 10-12 minutes or until sausage is browned and onion is tender. Set aside.

  2. In same skillet, heat remaining oil over medium heat. Add pierogies; cook and stir 1-2 minutes. Return sausage mixture to pan; heat through.
