Avocado-Bread Salad

Ingredients

  • 2 Tbsp. chopped fresh parsley
  • 1 garlic clove, pressed
  • 2 Tbsp. vegetable oil
  • 1 1/4 tsp. salt. divided
  • 3 cups (1/2-inch) French bread cubes
  • 1/3 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. fresh lime juice
  • 1/2 tsp. sugar
  • 4 plum tomatoes, chopped
  • 2 large avocados, peeled and chopped
  • 1/4 cup chopped red onion

Directions

  1. Stir together first 3 ingredients and 1/4 tsp. salt in a medium bowl. Add bread cubes, and toss gently. Arrange bread cubes in an even layer in a 15x 10-inch jellyroll pan.
  2. Bake bread cubes at 350 degrees for 15 minutes or until lightly toasted.
  3. Stir together mayonnaise, next 3 ingredients, and remaining 1 tsp. salt until blended.
  4. Add toasted bread cubes, chopped tomatoes avocados, and onion; toss gently. Serve immediately.
