Ingredients
- 2 Tbsp. chopped fresh parsley
- 1 garlic clove, pressed
- 2 Tbsp. vegetable oil
- 1 1/4 tsp. salt. divided
- 3 cups (1/2-inch) French bread cubes
- 1/3 cup mayonnaise
- 2 Tbsp. Dijon mustard
- 1 Tbsp. fresh lime juice
- 1/2 tsp. sugar
- 4 plum tomatoes, chopped
- 2 large avocados, peeled and chopped
- 1/4 cup chopped red onion
Directions
- Stir together first 3 ingredients and 1/4 tsp. salt in a medium bowl. Add bread cubes, and toss gently. Arrange bread cubes in an even layer in a 15x 10-inch jellyroll pan.
- Bake bread cubes at 350 degrees for 15 minutes or until lightly toasted.
- Stir together mayonnaise, next 3 ingredients, and remaining 1 tsp. salt until blended.
- Add toasted bread cubes, chopped tomatoes avocados, and onion; toss gently. Serve immediately.
