Avocado-and-Black Bean Frittata

Ingredients

  • 1 medium onion chopped
  • 1 Tbsp. vegetable oil
  • 2 large avocados, peeled and chopped
  • 1 (15 oz.) can black beans, rinsed and drained
  • 10 large eggs
  • 1/2 cup sour cream
  • 1/2 tsp. salt
  • 1/4 tp. pepper
  • 1/4 tsp. ground cumin
  • cheddar cheese
  • Toppings: avocado slices tomato slices, sour cream
  • Chunky salsa (optional)

Directions

  1. Saute chopped onion in hot vegetable oil in a 12-inch ovenproof skillet over medium-high heat 3 to 4 minutes or until tender. Remove from heat; sprinkle top evenly with chopped avocados and beans.
  2. Whisk together eggs and next 4 ingredients; pour over avocado mixture in skillet.
  3. Bake at 350 degrees for 25 minutes; sprinkle top evenly with cheese, and bake 5 more minutes. Remove from oven and let stand 5 minutes before serving. Serve with desired toppings and if desired, salsa.
