Healthy Beef Nachos

Delicious, and the mix of spices is just right
Fresh avocado salsa is a perfect addition for serving
Sour cream, chopped coriander leaves, grated cheese are extras for serving

Serves 6 people

Ingredients
- 500 gr premium beef mince
- 1 large onion, finely chopped
- 1 large red onion, sliced
- 5 cloves garlic, crushed
- 2 t mild smoked paprika
- 2 t ground cumin
- 2 t ground coriander
- 1/2 t chilli powder
- 400 g can chopped tomatoes in juice
- 400 g can red kidney beans, drained
- Optional: 1/2 C roasted and marinated red capsicum, sliced or 1/2 red capsicum, diced
- 2 C beef stock
- 1/4 C tomato paste
- 1 t brown sugar
- Optional: can corn kernels, drained, chopped spinach or grated courgettes to add some greens - add to sauce near end of cooking
- Optional avocado salsa - 1 avocado, 1 cucumber, 1/2 cup fresh coriander, squeeze lime or lemon juice
- Optional for serving: sour cream and grated cheese
Directions

Brown mince, in batches, in a little oil and set aside.

Cook onions in little extra oil, over medium heat, approx 8 minutes, until soft.

Add mince back into frying pan, along with spices, tomatoes, beans, stock, and sugar, and capsicum if using.

Simmer until reduced to a nice thick sauce (around 30 minutes).

Season to taste with salt and pepper.

Serve with corn chips, or home baked tortilla ‘chips’ for a healthier version, avocado salsa, sour cream and grated cheese.

For avocado salsa: combine the diced flesh of one avocado, diced cucumber which has been deseeded, 1/2 C chopped fresh coriander leaves, and a squeeze of lime or lemon juice.
