Zucchini Bread

Ingredients
- 1 1/2 cups all-purpose flour
- 1 up sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- 1 cup ripe bananas mashed
- 1/2 cup canola oil
- 1/2 tsp. banana extract (optional)
- 1/2 tsp. vanilla
- 1 cup zucchini, shredded
- 1/2 cup chopped nuts
Directions
- In a large bowl, mix flour, sugar, cinnamon baking powder, baking soda and salt. In a small bowl beat egg, oil, bananas and extracts. Stir in the flour mixture, just until moist. Fold in zucchini and nuts.
- Spray (2) 5 3/4 × 3 × 2 inch pans (loaf) with cooking spray. Bake at 325 degrees for 40-435 minutes; check with toothpick. Cool 10 minutes and remove from baking pans.

Variations: add coconut, chocolate chips and/or cranberries , or raisins.
