Zucchini Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 up sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1 cup ripe bananas mashed
  • 1/2 cup canola oil
  • 1/2 tsp. banana extract (optional)
  • 1/2 tsp. vanilla
  • 1 cup zucchini, shredded
  • 1/2 cup chopped nuts

Directions

  1. In a large bowl, mix flour, sugar, cinnamon baking powder, baking soda and salt. In a small bowl beat egg, oil, bananas and extracts. Stir in the flour mixture, just until moist. Fold in zucchini and nuts.
  2. Spray (2) 5 3/4 × 3 × 2 inch pans (loaf) with cooking spray. Bake at 325 degrees for 40-435 minutes; check with toothpick. Cool 10 minutes and remove from baking pans.
  3. Variations: add coconut, chocolate chips and/or cranberries , or raisins.
