Black Bean Sausage Skillet

Ingredients

  • 4 celery ribs, sliced
  • 1 medium sweet red pepper cut into 1/2-inch pieces
  • 12 oz. reduced-fat fully cooked kielbasa or Polish sausage, halved lengthwise and sliced
  • 1/2 cup salsa
  • 3 Tbsp. lemon juice
  • 1/4 to 1/2 tsp. hot pepper sauce
  • 1 can (15 oz.) black beans, rinsed and drained
  • 2 cups hot cooked rice

Directions

  1. Spray a large nonstick skillet with nonstick cooking spray. Add celery and pepper; sauté over medium heat for 3-4 minutes or until crisp-tender. Add the kielbasa, salsa, lemon juice and hot pepper sauce. Cook for 8-10 minutes or until vegetables are tender, stirring occasionally.
  2. Remove from heat; stir in beans. Cover and let stand for 5 minutes or until heated through. Serve over rice.
