Black Bean Sausage Skillet

Ingredients
- 4 celery ribs, sliced
- 1 medium sweet red pepper cut into 1/2-inch pieces
- 12 oz. reduced-fat fully cooked kielbasa or Polish sausage, halved lengthwise and sliced
- 1/2 cup salsa
- 3 Tbsp. lemon juice
- 1/4 to 1/2 tsp. hot pepper sauce
- 1 can (15 oz.) black beans, rinsed and drained
- 2 cups hot cooked rice
Directions
- Spray a large nonstick skillet with nonstick cooking spray. Add celery and pepper; sauté over medium heat for 3-4 minutes or until crisp-tender. Add the kielbasa, salsa, lemon juice and hot pepper sauce. Cook for 8-10 minutes or until vegetables are tender, stirring occasionally.
- Remove from heat; stir in beans. Cover and let stand for 5 minutes or until heated through. Serve over rice.
