Blue Cheese Biscuits with Beef and Horseradish-Chve Cream

Ingredients
- 2 cups self-rising flour
- 1 (8oz.) container sour cream
- 1/2 cup butter,, melted
- 1 (4oz.) pkg. crumbled blue cheese
- 2 ( 6oz.) beef tenderloin steaks (about 1 1/2 inches thick)
- 1/2 tsp. slat
- 1/2 tsp. pepper
- 1/2 Tbsp. vegetable oil
- Horseradish- Chive Cream:
- 1 (8oz.) container sour cream
- 1 Tbsp. prepared horseradish
- 1 Tbsp. Dijon mustard
- 1 Tbsp. chopped fresh chives
Directions
- Stir together first 4 ingredients just until blended.
- Turn dough out onto a lightly floured surface. Pat dough to a 1/2-inch thickness; cut with a 2-inch round cutter. Place on lightly greased baking sheets.
- Bake at 425 degrees for 12 to 15 minutes or until lightly browned.
- Sprinkle steaks with salt and pepper. heat oil in a small skillet over high heat; add steaks, and cook 8 to 9 minutes on each side or to desired degree of doneness. Remove steaks from pan; let stand 15 minutes.
- Cut steaks into 1/4-inch slices. Split biscuits in half and top half evenly with beef slices and Horseradish- Chive Cream. Top with remaining biscuit halves.

Horseradish-Chive Cream:
- Stir together all ingredients. Chill until ready to serve.
