Bourbon-Peach Cocktail

Ingredients

  • 4 Tbsp. bourbon
  • 1 1/2 Tbsp. fresh lemon juice
  • 1 1/2 Tbsp. Demerara Simple Syrup
  • 1 Tbsp. peach schnapps
  • 2 Tbsp. club soda
  • 3 to 4 dashes Peychaud's bitters (optional)
  • Garnishes: a peach slice, a lemon slice and a fresh mint sprig
  • Syrup:
  • 1/2 cup water
  • 1/2 cup Demerara Sugar

Directions

  1. Combine first 4 ingredients in a cocktail shaker; fill with ice. Cover with lid, and shake vigorously until thoroughly chilled (about 30 seconds). Strain bourbon mixture into a 10-oz. glass filled with ice; top with club soda and, if desired bitters.

  3. Cook Demerara sugar and water in a 2-quart saucepan over medium-high heat, stirring constantly, 3 to 4 minutes or until sugar is dissolved. Cool to room temperature (about 30 minutes). Store in airtight container in refrigerator up to 1 week.
