Ingredients
- 4 Tbsp. bourbon
- 1 1/2 Tbsp. fresh lemon juice
- 1 1/2 Tbsp. Demerara Simple Syrup
- 1 Tbsp. peach schnapps
- 2 Tbsp. club soda
- 3 to 4 dashes Peychaud's bitters (optional)
- Garnishes: a peach slice, a lemon slice and a fresh mint sprig
- Syrup:
- 1/2 cup water
- 1/2 cup Demerara Sugar
Directions
- Combine first 4 ingredients in a cocktail shaker; fill with ice. Cover with lid, and shake vigorously until thoroughly chilled (about 30 seconds). Strain bourbon mixture into a 10-oz. glass filled with ice; top with club soda and, if desired bitters.

For syrup:
- Cook Demerara sugar and water in a 2-quart saucepan over medium-high heat, stirring constantly, 3 to 4 minutes or until sugar is dissolved. Cool to room temperature (about 30 minutes). Store in airtight container in refrigerator up to 1 week.
