Ingredients

  • 1 Tbsp. Kumquat Confit
  • 1 to 3 thin fresh jalapeno pepper slices
  • 3 Tbsp. whiskey
  • crushed ice
  • Club Soda
  • Garnish: candled kumquat slices
  • Kumquat Confit:
  • 1 (8 oz.) container kumquats
  • 1 cup sugar
  • 1/2 cup water

Directions

  1. Muddle kumquat Confit and jalapeno slices against sides of an 8 oz. glass to release flavors. Stir in whiskey and enough crushed ice to fill glass half way; top with chilled club soda. Garnish with candied kumquat slices.

  3. Cut kumquats into thin slices, and place in a medium bowl.
  4. Combine sugar and water in a small saucepan; bring to a boil over medium high heat stirring often. Boil, stirring often, 1 minute. Pour mixture over kumquats; let stand at room temperature 30 minutes.
