Ingredients
- 1 Tbsp. Kumquat Confit
- 1 to 3 thin fresh jalapeno pepper slices
- 3 Tbsp. whiskey
- crushed ice
- Club Soda
- Garnish: candled kumquat slices
- Kumquat Confit:
- 1 (8 oz.) container kumquats
- 1 cup sugar
- 1/2 cup water
Directions
- Muddle kumquat Confit and jalapeno slices against sides of an 8 oz. glass to release flavors. Stir in whiskey and enough crushed ice to fill glass half way; top with chilled club soda. Garnish with candied kumquat slices.

Kumquat Confit:
- Cut kumquats into thin slices, and place in a medium bowl.
- Combine sugar and water in a small saucepan; bring to a boil over medium high heat stirring often. Boil, stirring often, 1 minute. Pour mixture over kumquats; let stand at room temperature 30 minutes.
