Homemade Chips

Ingredients

  • 2 large Russet potatoes
  • 1 tbsp olive oil
  • salt and black pepper to taste
  • Optional Toppings:
  • 2 tbsp finely grated Parmesan
  • 1/2 tbsp smoked paprika
  • 1 tbsp chopped fresh rosemary
  • 1 garlic clove, minced
  • 1/4 cup chopped parsley and the grated zest of 1 lemon

Directions

  1. Preheat the oven to 400. Scrub the potatoes with cold water and cut crosswise into 1/8" thick slices. Toss with the olive oil and season with salt and pepper.

  2. Spread in a single layer on a baking sheet. Sprinkle with Parmesan, paprika or rosemary before serving; add the parsley mixture after baking. Bake until lightly crowned and crispy, about 20 minutes.
