Ingredients
- 1/2 cup each diced onion, celery and red bell pepper
- 1 tbsp minced fresh garlic
- 1 tbsp olive oil
- 1 1/2 cup chicken broth
- 1 cup dry quick-cooking bulgar
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes
- 1/2 cup chopped walnuts, toasted
- 1/4 cup chopped fresh parsley
- 1 tbsp minced lemon zest
Directions

Saute onion, celery, bell pepper, and garlic in oil in saucepan over medium-high heat until veggies begin to soften, about 4 minutes.

Stir in broth, bulgar, sat and pepper flakes; bring to a boil. Reduce heat to low and simmer, covered, until bulgur is tender, about 15 minutes. Stir in walnuts, parsley and zest.
