Greek Deviled Eggs

Ingredients

  • 6 eggs
  • 3 tbsp mayo
  • 3 tbsp plain Greek yogurt
  • 2 tbsp crumbled feta
  • 2 tsp white whine vinegar
  • 1/2 tsp fresh minced garlic
  • salt to taste
  • 2 tsp chopped fresh dill
  • fresh dill fronds
  • English cucumber slices

Directions

  1. Hard cook eggs by placing them in a saucepan covered with cold water; bring to a boil over high heat. Cover pan, remove from heat, and let eggs stand 12 minutes. Drain eggs and let cold water run in the pan to cool them, then peel, dry and halve lengthwise. Scoop yolks into a mini food processor and set whites on a serving tray.

  2. Puree yolks with mayo, yogurt, feta, vinegar and garlic; season with salt.

  3. Stir in chopped dill, then pipe or spoon yolk mixture into egg white halves. Garnish eggs with dill fronds and cucumber slices.
