Ingredients
- 2 large sweet onions, cut into 1/2-inch thick slices and separated into rings
- 2 cups buttermilk
- 1/2 cup mayo
- 2 tbsp Sriracha sauce
- 2 tbsp honey
- 2 1/4 cups cornstarch, divided
- 3/4 cup flour
- 2 tsp kosher salt
- 1 tsp sugar
- 1/4 tsp cayenne pepper
- 1 lager beer (12 oz)
- peanut oil
Directions

For the onions, soak rings in buttermilk in a Ziploc bag, 15-30 minutes; flip occasionally to redistribute buttermilk.

For the sauce, whisk together mayo, Sriracha and honey; chill until ready to serve.

For the batter, whisk together 3/4 cup cornstarch, flour, 2 tsp salt, sugar, and cayenne; whisk in beer.

Heat oil in a large pot filled two-thirds over medium-high to 365. Drain rings. Working in small batches, place rings in a separate Ziploc bag with remaining 1 1/2 cups cornstarch; toss to coat, then shake off excess.

Dip coated rings in batter, letting excess drip off, then add to hot oil. Fry rings, in batches, turning once, until golden brown, about 3 minutes per batch; transfer to paper towel-lined plate and season with salt. Batter and fry remaining rings. Serve onion rings with sauce.
