Ingredients
- 1 tbsp olive oil
- 1 cup diced white onions
- 1 tbsp fresh minced garlic
- 2 tsp minced chipotles in adobo sauce
- 4 cups chicken broth
- 14.5 oz can diced tomatoes in juice
- 1 cup frozen corn kernels
- 4 oz can diced green chilies
- 2 cups shredded, cooked chicken
- 1/4 cup chopped fresh cilantro
- 2 tsp fresh lime juice
- salt and black pepper to taste
- diced avocado
Directions

Heat oil in a pot over medium. Add onions; cook until softened, 3-4 minutes. Stir in garlic and chipotles; cook until fragrant, 1 minute.

Stir in broth, tomatoes, corn and chilies and bring to a boil over high heat. Reduce heat to medium-low and simmer soup 10 minutes.

Add chicken, cilantro, and lime juice and season soup with salt and pepper. Serve soup with avocado.
