Chipotle Chicken and Corn Soup

Ingredients

  • 1 tbsp olive oil
  • 1 cup diced white onions
  • 1 tbsp fresh minced garlic
  • 2 tsp minced chipotles in adobo sauce
  • 4 cups chicken broth
  • 14.5 oz can diced tomatoes in juice
  • 1 cup frozen corn kernels
  • 4 oz can diced green chilies
  • 2 cups shredded, cooked chicken
  • 1/4 cup chopped fresh cilantro
  • 2 tsp fresh lime juice
  • salt and black pepper to taste
  • diced avocado

Directions

  1. Heat oil in a pot over medium. Add onions; cook until softened, 3-4 minutes. Stir in garlic and chipotles; cook until fragrant, 1 minute.

  2. Stir in broth, tomatoes, corn and chilies and bring to a boil over high heat. Reduce heat to medium-low and simmer soup 10 minutes.

  3. Add chicken, cilantro, and lime juice and season soup with salt and pepper. Serve soup with avocado.
