Toasted Pita Bread Salad with Fresh Mint and Lemon Dressing

Ingredients

  • For the dressing:
  • 1/2 cup lemon juice
  • 1/2 olive oil
  • 1 garlic clove, minced
  • 1 tsp salt
  • 1/2 tsp ground sumac
  • 1/4 tsp black pepper
  • For the salad:
  • 2 cups shredded romaine
  • 1 large cucumber, seeded and diced
  • 2 medium tomatoes, diced
  • 1/2 cup chopped parsley
  • 1/4 cup chopped mint leaves
  • 1 small green bell pepper, diced
  • 1 bunch scallions, thinly sliced
  • 2 whole-wheat pita bread rounds, toasted and broken into quarter-sized pieces
  • Ground sumac for garnish

Directions

  1. To make the dressing, whisk together the lemon juice, olive oil, garlic, salt, sumac and pepper in a small bowl.

  2. To make the salad, in a large bowl, combine the lettuce, cucumber, tomatoes, parsley, mint, bell pepper, scallions, and pita bread. Toss to combine. Add the dressing and toss again to coat well.

  3. Serve immediately sprinkled with sumac.
