Ingredients
- 1/2 cup white wine vinegar
- 1 small garlic clove, minced
- 1 tsp crumbled dried Greek oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cucumbers, sliced thinly
- 4-6 long, skinny red or yellow banana peppers
- 1 medium red onion, cut into rings
- 1 pint mixed small heirloom tomatoes, halved
- 2 oz crumbled goat or feta cheese
Directions

In a large, nonreactive bowl, whisk together the vinegar, garlic, oregano, salt and pepper. Add the cucumbers, pepper, and onion and toss to mix. Cover and refrigerate for at least 1 hour.

Add the tomatoes to the bowl and toss to coat. Serve topped with the cheese.
