Marinated Greek Salad with Oregano and Goat Cheese

Ingredients

  • 1/2 cup white wine vinegar
  • 1 small garlic clove, minced
  • 1 tsp crumbled dried Greek oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cucumbers, sliced thinly
  • 4-6 long, skinny red or yellow banana peppers
  • 1 medium red onion, cut into rings
  • 1 pint mixed small heirloom tomatoes, halved
  • 2 oz crumbled goat or feta cheese

Directions

  1. In a large, nonreactive bowl, whisk together the vinegar, garlic, oregano, salt and pepper. Add the cucumbers, pepper, and onion and toss to mix. Cover and refrigerate for at least 1 hour.

  2. Add the tomatoes to the bowl and toss to coat. Serve topped with the cheese.
