Turkey and Provolone Panini with Roasted Peppers and Onions

Ingredients

  • 2 red bell peppers, seeded and quartered
  • 2 red onions, peeled and quartered
  • 2 tbsp olive oil
  • salt and black pepper
  • 2 tbsp olive oil
  • 8 slices whole-wheat bread
  • 8 oz thinly sliced provolone cheese
  • 8 oz sliced roasted turkey breast

Directions

  1. Preheat oven to 375.

  2. To roast the peppers and onions, toss them together with olive oil, salt and pepper on a large, rimmed baking sheet. Spread them out in a single layer and then bake in oven for 45-60 minutes, turning occasionally, until they are tender and beginning to brown. Remove the peppers and onions from the oven and let them cool for a few minutes until they are cool enough to handle. Skin the pepper and thinly slice them. Thinly slice the onions.

  3. Preheat a skillet over medium-high.

  4. To make the panini, brush one side of each of the 8 slices of bread with olive oil. Place 4 of the bread slices, oiled side down, on your work surface. Top each with 1/4 of the cheese and 1/4 of the turkey, and top with some of the roasted peppers and onions. Place the remaining 4 bread slices on top of the sandwiches, oiled side up.

  5. Place the sandwiches in the skillet, cover the pan, and cook until the bottoms have golden brown grill marks and the cheese is beginning to melt, about 2 minutes. Turn the sandwiches over and cook, covered, until the second side is golden brown and the cheese is melted, another 2 minutes or so. Cut each sandwich in half and serve immediately.
