Ingredients
- 1 large cucumber, seeded
- salt
- 1 1/2 cups Greek yogurt
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp white vinegar
- 1 tbsp minced dill

Grate the cucumber on the large holes of a box grater. Place the grated cucumber in a sieve and sprinkle with salt. Let drain for 20 minutes or so. Transfer to a clean dish towel and squeeze excess water out.

In a large bowl, stir together yogurt, garlic, olive oil, vinegar and salt. Add the cucumber and dill to the yogurt and stir to mix well. Taste and add more salt, if needed. Cover and refrigerate until use.
