Ingredients
- Tzatziki Sauce (see recipe)
- 1 medium cucumber diced
- 1 pint grape tomatoes, quartered
- 1 small red onion, diced
- 1/3 cup chopped parsley
- 1/4 cup chopped mint
- 1/2 head iceberg, thinly sliced
- 1/2 tsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 1 tsp dried oregano
- 2 garlic cloves, minced
- 4 pocketless pitas
- 1/2 roast chicken, skin discarded and shredded

Preheat the broiler.

To make the chopped salad, in a medium bowl, combine the diced cucumber with the tomatoes, onion, parsley, mint, lettuce, lemon juice, salt and pepper.

To make the garlic-herb oil, heat the olive oil, oregano, garlic, salt and pepper in a small saucepan over medium-high heat, stirring, for about 2 minutes, until the garlic is aromatic. Toss 3 tbsp of the garlic-herb oil with the chicken in a medium bowl.

Place the pitas on a baking sheet and brush the tops with remaining garlic-herb oil. Cover with foil and heat under the broiler for about 4 minutes. Remove foil and continue to broil until bread begins to brown in spots, about 2 more minutes.

Dollop some Tzatziki on each pita. Top with 1/4 of the chicken and a handful of the chopped salad. Serve immediately.
