Ingredients
- 1 lb asparagus, trimmed
- 1 lb fingerling potatoes, cut into thin rounds
- 2 scallions, thinly sliced
- 3 tbsp olive oil
- salt and pepper
- 1 tbsp fresh thyme

Preheat the oven to 450.

In a large baking dish, combine the asparagus, potatoes and scallions and toss to mix. Add the olive oil, salt and pepper and toss again to coat all of the vegetables in the oil. Spread the vegetables out in as thin a layer as possible and roast in the preheated oven, stirring once, until the vegetables are tender and nicely browned, about 20 minutes. Just before serving, sprinkle with the thyme. Serve hot.
