Greek Chicken Drumsticks with Roasted Lemon, Fresh Oregano, and Feta Cheese

Ingredients
- 3 medium lemons, two cut into wedges and seeded and third zested
- 1/4 cup olive oil, plus 1 tbsp
- 1 1/4 tsp salt
- 8 chicken drumsticks
- 1/2 tsp black pepper
- 1/2 cup whole-wheat bread crumbs
- 1 garlic clove, minced
- 3 oz feta cheese, cut into 8 slices
- 3 tbsp chopped fresh oregano
Directions

Preheat oven to 325 and line a large, rimmed baking sheet with parchment paper.

Place the lemon wedges on the prepared baking sheet in a single layer and brush with 1 tbsp olive oil and sprinkle with salt. Roast the lemons in the oven for about 20 minutes, until they begin to soften.

While the lemons are roasting, prepare the chicken. Sprinkle salt and pepper over the drumsticks, seasoning them on all sides.

Heat 2 tbsp of olive oil in a large skillet set over medium-high heat. Add the drumsticks and cook for about 3 minutes on each side, until they are golden brown all over.

Remove the lemons from the oven and add the chicken to the baking sheet. Return the pan to the oven and cook for 30 minutes.

Meanwhile, in a small bowl, stir together the breadcrumbs, 2 tbsp olive oil, garlic and lemon zest.

Top each drumstick with a slice of cheese and top the cheese with a mound of the breadcrumb mixture. Sprinkle the oregano over the top. Return the pan to the oven and bake for another 20-25 minutes, until the chicken is cooked through. Serve immediately.
