Crunchy Marinated Carrots

Ingredients
- 4 carrots, peeled and cut into 3-inch sticks
- 1 1/2 Tbsp. cider vinegar
- 1 1/2 Tbsp. vegetable oil
- 1 small garlic clove, minced
- 1/4 to 1/2 tsp. salt
- 1/4 tsp. sugar
- Chopped fresh parsley (optional)
Directions
- Combine first 6 ingredients; cover and chill 8 hours. Drain. Sprinkle with parsley, if desired.
