Ingredients
- 5 tbsp olive oil
- 3 medium onions, thinly sliced
- 4 garlic cloves, very thinly sliced
- 1 1/2 tsp salt
- 2 lbs top sirloin steak
- 1/2 tsp black pepper
- 2 tbsp chopped fresh thyme
- 3 medium potatoes, peeled and thinly sliced
- 2 sprigs fresh rosemary, leaves picked and finely chopped
- 1/4 cup grated Parmesan, plus 4 tbsp
- 28 oz can crushed tomatoes

Preheat the oven to 325.

Heat 2 tbsp of olive oil in a large skillet over medium heat. Add the onions and garlic along with 1/2 tsp salt, reduce the heat to medium-low, and cook, stirring frequently, until the become very soft and golden brown, about 20 minutes. Remove from the heat.

Add 1 tbsp of olive oil to a Dutch oven over medium-high heat. Pat the meat dry with paper towels and sprinkle with the remaining 1 tsp salt and pepper. Brown the meat on both sides in the Dutch oven, about 10 minutes.

Place about half of the cooked onions on top of the meat in an even layer. Sprinkle 1 tbsp of thyme over the onions, then top with half of the potato slices, arranging them in an even layer. Drizzle with 1 tbsp of olive oil, and top with half of the rosemary, and 2 tbsp cheese. Pour half of the tomatoes over the top. Repeat with the remaining onions, thyme, potatoes, the remaining tbsp of olive oil, rosemary, 2 tbsp of cheese and the tomatoes. Place the lid on the Dutch oven and cook in the oven for about 4 hours, until the meat is very tender. Sprinkle the remaining 1/4 cup of cheese over the top and cook under the broiler for a few minutes, until the cheese is melted and golden brown. Serve hot.
