Meat and Potato Scramble

Ingredients

  • 6 large eggs
  • 1/4 cup half-and-half
  • salt and black pepper
  • 2 tbsp butter
  • 1/2 onion, diced
  • 4 slices bacon, cut into small pieces
  • 1/2 lb breakfast sausage
  • 1 small russet potato, baked until tender and diced
  • salt and pepper
  • 1/2 cup small-cubed Cheddar cheese
  • 4 green onions, sliced

Directions

  1. Make the scramble: mix together the eggs, half-and-half and salt and pepper until combined.

  2. Melt the butter in a large skillet over medium-high heat. Add the onion, bacon and sausage and saute until the meats are cooked through and the onion is golden. Drain off the fat.

  3. Add the potato, sprinkle with salt and pepper, and cook to warm the potato, about 3 minutes.

  4. Lower the heat to medium-low. Pour in the scramble.

  5. And cook until soft, creamy curds begin to form.

  6. Add the cheese and green onions and stir until the eggs are cooked and the cheese is almost totally melted.
