Cinnamon Mocha Parfaits

Ingredients

  • 1/3 cup sugar
  • 3 Tbsp. baking cocoa
  • 2 Tbsp. instant coffee granules
  • Dash salt
  • Dash ground cinnamon
  • 1 1/3 cups milk
  • 1 Tbsp. butter
  • 1/2 tsp. vanilla extract
  • 1 1/4 cups whipped topping, divided
  • Chocolate curls

Directions

  1. In a saucepan, combine the first six ingredients; gradually stir in milk until smooth. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened.
  2. Remove from heat; stir in butter and vanilla. Spoon 3 Tbsp. into each of four parfait glasses. Pour the remaining pudding into a bowl; cover and refrigerate for 20 minutes. Fold in 1 cup whipped topping. Spoon into parfait glasses. Garnish with remaining whipped topping; top with chocolate curls.
