Ingredients
- 1 1/2 lbs Italian sausage
- 1 large onion, diced
- 3 cups whole milk
- 2 cups half-and-half
- 1/4 cup cream
- 4 cups chicken broth
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes
- Kosher salt and black pepper, to taste
- 8-10 medium red potatoes, boiled until almost tender
- 1-2 bunches of kale, stalks removed, torn into bite-size pieces

In a large pot over medium-high heat, saute the Italian sausage with the onion, until the sausage is totally cooked, 5-7 minutes. Drain off the excess fat, then pour the sausage mixture onto a rimmed baking sheet lined with paper towels in order to remove as much fat as possible. Set aside.

Wipe the pot clean, then return it to the stove over medium heat. Pour in the milk, half-and-half, cream, and the broth. Add the oregano, red pepper flakes and salt and pepper.

Add the sausage back in and bring it to a gentle boil, stirring.

Slice the potatoes and add them in, along with the kale. Stir the soup gently until the kale wilts and shrinks a bit, just 1-2 minutes. Reduce the heat to low, cover the pot, and let the soup simmer for 10 minutes.
