Oatmeal Pie

Ingredients

  • 1 (9-inch) pie crust
  • 4 eggs
  • 1 cup white sugar
  • 2 Tbsp. all-purpose flour
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 cup white corn syrup
  • 2 Tbsp. butter, melted
  • 1 tsp. vanilla extract
  • 1 cup rolled oats

Directions

  1. Heat oven to 350 degrees. Line 9-inch pie plate with pie crust.
  2. In a bowl, beat eggs until frothy.
  3. In a separate bowl, combine sugar, flour, cinnamon and salt. Add eggs; mix well. Add corn syrup, melted butter and vanilla. Stir in the oats. Pour into prepared pie plate.
  4. Bake 45 minutes or until center is just set. Cool completely before slicing.
