Festive Corn Bread

Ingredients

  • 1 3/4 cup cornmeal
  • 4 tsp. baking powder
  • 2 eggs
  • 1/4 cup green chilies
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1/3 cup Splenda Granular
  • 1/2 cup diced red bell peppers
  • 1 tsp. salt
  • 1 cup frozen corn kernels
  • 1 3/4 cups low-fat buttermilk

Directions

  1. Preheat oven to 350 degrees. Blend dry ingredients in large bowl.
  2. Add buttermilk, oil, eggs. Stir well. Add remaining ingredients. Mix well for 3 minutes. Pour into greased 8 × 8 inch baking pan.
  3. Bake 50 to 60 minutes.
