Sauteed Brussel Sprouts with Poppy Seeds

Ingredients
- 1 1/2 lb. Brussels Sprouts, trimmed
- 3 Tbsp. olive oil
- 1 large shallot, finely chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. white wine vinegar
- 1 Tbsp. poppy seeds
Directions
- Using a knife, a mandolin or a food processor

fitted with a slicing disc, thinly slice Brussels sprouts.
- In a large skillet, heat oil over medium-high heat. Add shallot and cook, stirring often, until it begins to soften, 2 to 3 minutes.
- Add Brussels sprouts, salt and pepper to skillet. Cook, tossing often, until Brussels sprouts are tender, 4 to 6 minutes. Remove from heat and stir in vinegar and poppy seeds.
