Sweet Potato Pineapple Bake

Ingredients
- 3 cups mashed sweet potatoes
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup butter, melted
- 2 eggs, lightly beaten
- 1 tsp. vanilla extract
- Dash salt
- Topping:
- 1/4 cup sugar
- 1/4 cup all-purpose flour
- 1 can (8oz.) crushed pineapple, undrained
- 1/4 cup butter, melted
- 2 eggs
Directions
- In a large bowl, combine the first seven ingredients. Pour into a lightly greased 9-inch square baking dish. Combine the topping ingredients; pour over potato mixture. Bake, uncovered, at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Refrigerate leftovers.
