Sweet Potato Pineapple Bake

Ingredients

  • 3 cups mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 eggs, lightly beaten
  • 1 tsp. vanilla extract
  • Dash salt
  • Topping:
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1 can (8oz.) crushed pineapple, undrained
  • 1/4 cup butter, melted
  • 2 eggs

Directions

  1. In a large bowl, combine the first seven ingredients. Pour into a lightly greased 9-inch square baking dish. Combine the topping ingredients; pour over potato mixture. Bake, uncovered, at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Refrigerate leftovers.
