Shrimp with Feta Cheese

Ingredients

  • 1 lb. unpeeled, large fresh shrimp
  • 1 Tbsp. butter or margarine
  • 1 tsp. lemon juice
  • 1 medium onion, halved and thinly sliced
  • 2 Tbsp. olive oil
  • 1/2 cup dry white wine
  • 1/2 cup clam juice
  • 1 garlic clove, minced
  • 3 to 4 plum tomatoes, coarsely chopped
  • 2 tsp. chopped fresh oregano
  • 1 tsp. chopped fresh basil
  • 1 tsp. chopped fresh parsley
  • 1 cup crumbled feta cheese
  • Garnish: fresh oregano sprig

Directions

  1. Peel shrimp and devein, if desired.
  2. Melt butter in a large skillet over medium heat; add shrimp and lemon juice, and sauté 2 to 3 minutes or just until shrimp turn pink. Remove shrimp from skillet.
  3. Sauté onion in hot oil until tender. Add wine, clam juice and garlic. Reduce heat and simmer 10 minutes. Add tomato, and simmer 10 minutes. Add tomato, and simmer 5 more minutes. Stir in shrimp, oregano, basil, and parsley. Sprinkle with feta. Serve over hot cooked pasta or with crusty bread. Garnish, if desired.
