Slow-Cooker Sausage and Tater Totr Casserole

Ingredients
- 12 eggs
- 3/4 cup half-and-half
- 1/4 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 5 oz. sharp cheddar cheese, shredded
- 5 oz. Monterey Jack or pepper Jack cheese, shredded
- 1/2 cup finely chopped green onions, divided use
- 6 cups frozen tater tots
- 1 lb. ground pork sausage, cooked, drained
- 1/2 cup chopped roasted red pepper (from a jar is okay)
Directions
- Coat the cooing vessel of 5 to 6-quart slow cooker with vegetable oil or cooking spray.
- In medium bowl, beat eggs, half-and-half, smoked paprika, salt and pepper with whisk.
- In a separate bowl, combine the cheeses. reserve 1 cup of the cheese mixture and 2 Tbsp. of the green onions.
- Layer half of the tater tots, half of the sausage, all of the roasted peppers and remaining green onions in the slow cooker. Top with half of the cheese.
- Repeat using the remaining tater tots, sausage and cheese. Pour egg mixture over layers.
- Cover and cook on low for 7 to 8 hours or until egg mixture is set.
- Sprinkle reserved cheese and green onions over top of casserole. Cover and cook 10 to 20 minutes longer or until cheese is melted.
