Poor Man’s Lobster

Ingredients

  • 2 lbs. cod fillets
  • water
  • 1 tsp. salt
  • 1 bay leaf
  • 1 small onion, peeled and sliced
  • 1 slice lemon
  • 1/2 cup dry vermouth
  • hot melted butter
  • chopped fresh parsley

Directions

  1. Place fish in wok. Cover with water and next five ingredients; bring to boil. Reduce heat; simmer 8 to 10 minutes or until fish is opaque. Carefully remove fish from wok with slotted spatula. Serve hot with melted butter and chopped parsley.
