Poor Man’s Lobster

Ingredients
- 2 lbs. cod fillets
- water
- 1 tsp. salt
- 1 bay leaf
- 1 small onion, peeled and sliced
- 1 slice lemon
- 1/2 cup dry vermouth
- hot melted butter
- chopped fresh parsley
Directions
- Place fish in wok. Cover with water and next five ingredients; bring to boil. Reduce heat; simmer 8 to 10 minutes or until fish is opaque. Carefully remove fish from wok with slotted spatula. Serve hot with melted butter and chopped parsley.
